About the coffee

Cupping notes: Strawberry, cherry candy, elderflower, creamy toffee

The producer: They only select fully ripe berries and process them according to strict standards.

One of the producers behind this coffee is Arnaldo López, who has cultivated coffee his entire life. He runs 12.6 hectares and has experienced significant fluctuations in yield over the years. The latest harvest is smaller than before, partly due to disease in the older coffee varieties.

Arnaldo and his family work closely together on the farm, and income from coffee, livestock, and a small shop run by his wife helps them invest in future quality. The result is a clean, fruity, and distinctive coffee from an area with strong traditions and passionate producers.

Recommendation

Give the coffee a rest period When coffee is allowed to rest after roasting, the harsh and sharp flavours, which can even be described as 'roast' characteristics, soften, allowing finer and brighter notes to emerge more clearly.

We recommend letting the coffee rest for at least 7 days after the roast date, and we often find that the coffee reaches its absolute peak, especially for high-density coffees, after 2 weeks.

Brewing We also carry our straightforward approach to coffee over into brewing. We recommend our coffees for all brewing methods, whether it's immersion, percolation, or espresso. We believe that by light roasting the coffee in such a way that the inherent qualities of the raw material are showcased.
