About the coffee

Cupping notes: sweet, malt, hazelnut, milk chocolate, citrus fruit

The producer: Ten years ago, my family and I made the decision to return to Colombia after more than 15 years abroad. Inspired by our experiences in Central America, we embarked on a journey to create a specialty coffee project with a focus on quality, sustainability, and passion for coffee.

My father had always dreamed of owning a coffee farm, and he finally managed to make that dream a reality. A dream that also marked the beginning of my own close connection to coffee cultivation and the craft behind extraordinary coffee.

Today, the project is built on a love for Colombian coffee, respect for nature, and the desire to produce freshly roasted coffee beans with unique character and clear origin. The result is specialty coffee from Colombia with great complexity, balanced sweetness, and taste experiences that delight coffee lovers, home baristas, and professional baristas alike.

Recommendation

Allow the coffee to rest When coffee is allowed to rest after roasting, the harsh and sharp flavors, which can even be described as 'roast' characteristics, soften, making way for finer and brighter notes to emerge more clearly.

We recommend letting the coffee rest for at least 7 days after the roast date, and we often find that the coffee reaches its peak, especially for high-density coffees, after 2 weeks.

Brewing We also carry our straightforward approach to coffee into the brewing process. We recommend our coffees for all brewing methods, whether it's immersion, percolation, or espresso. We believe that by roasting coffee lightly, the inherent qualities of the raw material are showcased.
