The Producer: The Hindi word "Ratnagiri" literally translates to "Pearl Mountain", a reference to the dense canopy of silver oak trees that crown this farm. Ratnagiri was founded in 1920 and is owned and operated by Ashok Patre, having been passed down from grandfather to father and on to son. Ashok describes the process for this lot as follows:
This is a naturally processed coffee with extended carbonic maceration of 96 hours. It comes from the Hemavathi varietal, grown on our farm at 4,500 feet altitude in the field called Sivermara Patte. The Brix value of the coffee cherries was 25.9 at harvest, and after removing floaters, they were placed in bio-fermenters. The coffee was inoculated with a blend of different lab-grown cultures. The tanks were then flushed with carbon dioxide gas, and the coffee was fermented for 96 hours. After fermentation, the coffee was removed and placed directly on raised drying beds for slow drying. The coffee was then dried slowly with constant turning over the next 31 days.

Recommendation
Allow the coffee to rest When coffee is allowed to rest after roasting, the harsh and sharp flavors, which can even be described as 'roast' characteristics, soften, making way for finer and brighter notes to emerge more clearly.
We recommend letting the coffee rest for at least 7 days after the roast date, and we often find that the coffee reaches its peak, especially with high-density coffees, after 2 weeks.
